Over the years, I have learned a thing or two about cooking. I consider myself a home cook, not a chef, and that attitude is reflected in my dishes. I specialize in comfort cooking with modern updates to the classics. If you are looking for Dover Sole Meuniere followed by some Saint Honoré, then stop reading, call me and we can go try these dishes together somewhere else. But if you are looking for tasty family style dishes that are universally appealing to party crowds, then you may have stumbled onto something here.

The menu items on this page are a collection of my favorite dishes that I serve to my family, friends and catering customers on a regular basis. If you would like to incorporate any of these items into your BBQ menu, let me know, but unfortunately most of these dishes revolve around me so they are not available when I am out of town or otherwise indisposed. Four to seven day’s notice is generally needed to properly prepare. Or you can make an entire catering menu out of this selection as several customers do! Chicken

Chicken Piccata – sauteed chicken breast in a delicate lemon sauce

Chicken Florentine – sauteed chicken breast with a creamy garlic sauce over tender baby spinach – very popular even with people who don’t like spinach, but that is probably because of the cream the spinach is steeped in.

Jalapeno Chicken Salad – I got this recipe out of a popular foodie magazine – it was the first place winner for that month’s contest – and it has been a winner ever since. Great served with crackers, pita bread, crostini or rolled up in a flour tortilla.

Curried Chicken Salad – this was the second place finisher and it was terrific too, but you have to like curry.

Chicken Pot Pie – double crusted. This is my own masterpiece after watching seven seasons of the Great British Baking Championship, although I would call this a very American dish.

Chicken Marsala – Marsala wine and mushrooms really make this dish.

Roasted Lemon-herb Chicken Quarters

Grilled Chicken with Parsley Lemon Sauce – I reach for this dish when I want a light meal that still smacks of comfort food.

Spicy Paprika Rub Quarters

Jambalaya – made with chicken and andouille sausage.

Chicken Gumbo

Grilled Chicken Quarters with Garlic & Rosemary – it really makes a difference when you rub the garlic and rosemary underneath the chicken skin and that is what I do here.

 

Beef

Lightly Peppered Beef with Au Jus and Horseradish Sauce

Grandma’s Meatloaf – if your grandma overcooked her meatloaf, then this is not hers. This meatloaf is succulent and generously covered in that ketchup/mustard/brown sugar coating.

Swedish Meatballs with Worchestershire Cream Sauce

Asian Meatballs with Hoisin Sauce

Atlanta Brisket – it gets its name because it is braised in Coca Cola.

Pork

Sage & Garlic Crusted Pork Tenderloin

Herb Crusted Pork Tenderloin – handsdown one of my favorite pork dishes, so flavorful with a corriander, cumin, garlic, thyme rub.

Italian Braised Pork

City Ham – Mustard and Brown Sugar Coated (carved or uncarved)

Lamb

Garlic & Rosemary Leg of Lamb (or Lamb Chops)

Fish and Seafood

Shrimp and Grits – there are a good number of variations on this dish; this is the Charleston version.

Baked Fish Filet with Citrus, Garlic and Parsley Sauce – your choice of fish – orange roughy, salmon or tilapia.

Baked Salmon with Creamy Dill Sauce

 

Vegetarian

Buttermilk Leek Tart

Tomato Pie – I grow tomatoes and basil in my organic home garden and if in season, this is probably where your ingredients will come from.

Salad Entrees

 

Cobb Salad – grilled chicken breast, crisp bacon bits, avocado, crumbled gorgonzola cheese, tomatoes, scallions, and a hard-boiled egg on crisp garden greens with vinaigrette dressing.

Chef Salad – oven roasted turkey, ham, Cheddar and provolone cheeses, tomatoes, cucumbers, black olives and a hard-boiled egg piled high on a bed of mixed greens with balsamic dressing.

Italian Salad – grilled chicken breast, Genoa salami, lettuce, basil, garbanzo beans, tomatoes, scallions, provolone cheese, mozzarella and Italian vinaigrette.

Chicken Caesar – grilled chicken breast, crisp romaine lettuce, Roma tomatoes, freshly-baked homemade croutons and imported Parmesan cheese with traditional Caesar dressing.

Mediterranean Salad – roasted red peppers, garbanzo beans, Kalamata olives, marinated artichoke hearts, pepperoncini, and feta cheese served on a bed of romaine lettuce with balsamic dressing.

 

Sides

Beans & Greens – cannellini beans with sauteed greens in a vegetable broth. This dish is very popular in the Northeast and one of my favorites.

Skillet Cornbread – no sugar, just like back in the day when sugar was a luxury and often omitted in cornbread.

Jalapeno Cornbread – my favorite, with whole kernels of corn, cheese and of course an occasional jalapeno.

Side Salads

Fresh Field Green Salad featuring mandarin oranges, bermuda onions, sliced mushroooms and walnuts tossed in a balsamic vinaigrette.

Dinner Salad – iceberg, romaine and leaf lettuce mix with purple cabbage and shredded carrots. Balsamic and ranch dressings on the side.

Health Salad – cabbage, green bell peppers, onions, cucumber, and carrots in a garlic vinaigrette

Arugula Salad – arugula with cherry tomatoes, avocado, Parmesan cheese, croutons, radishes and sunflower seeds in a lemon vinaigrette.

Kale Salad – kale, dried cranberries, clementines, radishes, cilantro, feta cheese, sunflower seeds in a honey lime dressing.

Bibb Salad with Basil Green Goddess Dressing – (if you were alive in the 70’s, you probably remember Green Goddess Dressing. This is the original recipe with a touch of anchovy paste.)

Mozzarella, Tomato and Basil Salad

Apple & Goat Cheese Salad with Candied Pecans – the candied pecans have a little bit of smoked paprika in them, a perfect match to the Granny Smith apples
